Preparation
- Preheat your oven to 400°F.
- Combine the crushed corn chips, panko bread crumbs, dry bread crumbs, Mexican cheese blend, taco seasoning, and cayenne pepper in a mixing bowl. Stir well.
- Dip each chicken tenderloin into the melted butter, letting the excess drip off.
- Coat each tenderloin in the breadcrumb mixture, pressing gently to make sure the coating sticks.
- Arrange the coated chicken tenderloins on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until fully cooked and golden brown.
