Ingredients
  

For the Filling
  • 1 lb Ground Beef can substitute with ground turkey or chicken
  • 1 tbsp Olive Oil for browning the beef
  • 1 tbsp Chili Powder spice blend
  • 1 tbsp Smoked Paprika spice blend
  • 1 tsp Garlic Powder spice blend
  • 1 tsp Dried Oregano spice blend
  • 1 tsp Ground Cumin spice blend
  • 1 tsp Onion Powder spice blend
For the Wrap
  • 4 pieces Flour Tortillas can use corn tortillas for a gluten-free option
  • 2 cups Lettuce shredded
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Ranch Dressing can use salsa or sour cream instead
  • 1/2 cup Red Onion sliced, can be raw or sautéed
  • 1 cup Corn canned or frozen

Method
 

Preparation
  1. In a medium bowl, combine the ground beef with the spices. Heat olive oil in a non-stick skillet over medium-high heat until shimmering, then add the beef. Cook until browned and fully cooked, about 8-10 minutes, then set aside.
  2. Take each tortilla and cut from the center to the bottom edge. Layer your fillings by placing shredded lettuce and halved cherry tomatoes in the bottom left; spread a generous amount of ranch, then add sliced onion and corn in the top left; top with seasoned beef and shredded cheese in the top right; and finish with more cheese in the bottom right.
  3. Carefully fold the sections clockwise, forming a triangular wrap that encases all the delicious fillings.
  4. Preheat a non-stick pan or grill to medium heat. Place the folded wrap on the heated surface, grilling each side for about 2-3 minutes, or until golden brown and crisp.
