- In a medium bowl, combine the ground beef with the spices. Heat olive oil in a non-stick skillet over medium-high heat until shimmering, then add the beef. Cook until browned and fully cooked, about 8-10 minutes, then set aside.
- Take each tortilla and cut from the center to the bottom edge. Layer your fillings by placing shredded lettuce and halved cherry tomatoes in the bottom left; spread a generous amount of ranch, then add sliced onion and corn in the top left; top with seasoned beef and shredded cheese in the top right; and finish with more cheese in the bottom right.
- Carefully fold the sections clockwise, forming a triangular wrap that encases all the delicious fillings.
- Preheat a non-stick pan or grill to medium heat. Place the folded wrap on the heated surface, grilling each side for about 2-3 minutes, or until golden brown and crisp.
