For the Crust
  • 1 cup ground graham crackers
  • 1/2 cup unsalted butter melted
For the Filling
  • 16 oz cream cheese at room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs at room temperature
  • 1 large yolk at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
For the Topping
  • 8 oz whole strawberries washed and dried
  • 8 oz dark chocolate melted

Method
 

Cheesecake Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Mix the ground graham crackers and melted butter in a bowl. Press this mixture into the bottom of a 9-inch springform pan.
  3. Beat the cream cheese until smooth. This can take about 2-3 minutes.
  4. Combine the sugar, eggs, yolk, vanilla extract, and salt with the cream cheese mixture. Mix until creamy.
  5. Pour the cream cheese filling into the crust and spread it evenly.
  6. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggle.
  7. Cool the cheesecake on a wire rack before refrigerating for at least 4 hours.
  8. Melt the dark chocolate and dip the strawberries into it, then place them on top of the cheesecake.
