How to Make Coffee Truffles
- Line a small flat dish with non-stick baking paper.
- Gently warm the heavy cream in a saucepan over low heat until just below boiling.
- Stir in the finely chopped dark chocolate and coffee granules until melted and smooth.
- Pour the mixture into the prepared dish and refrigerate for about 2 hours until firm.
- Once firm, scoop and roll into 1-inch balls, then chill again for 30 minutes.
- Melt the milk chocolate in a heatproof bowl over simmering water and let cool for about 15 minutes.
- Dip each truffle into the melted chocolate and allow excess to drip off.
- Place dipped truffles on a lined tray and chill until set.
