Making the Bars
- In a mixing bowl, combine flour, brown sugar, and salt. Rub in very cold butter until the mixture resembles coarse crumbs. Press this into the bottom of a greased or lined baking pan.
- Clean and chop the dried figs. Simmer in water until softened, around 5-7 minutes. Blend with lemon juice until smooth and spread this mixture evenly over the crust.
- In a bowl, beat together the cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy. Spread this topping over the fig layer, ensuring even coverage.
- Preheat your oven to 180°C (356°F). Bake for about 30 minutes, or until the center is set with a slight jiggle. Allow to cool completely in the pan before slicing into bars.
