For the Fig Layer
  • 1 cup Fresh or Dried Figs cleaned and diced if fresh
  • 1 tablespoon Lemon Juice brightens sweetness

Equipment

  • mixing bowl
  • Blender
  • Baking Pan
  • Oven

Method

Making the Bars
  1. In a mixing bowl, combine flour, brown sugar, and salt. Rub in very cold butter until the mixture resembles coarse crumbs. Press this into the bottom of a greased or lined baking pan.
  2. Clean and chop the dried figs. Simmer in water until softened, around 5-7 minutes. Blend with lemon juice until smooth and spread this mixture evenly over the crust.
  3. In a bowl, beat together the cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy. Spread this topping over the fig layer, ensuring even coverage.
  4. Preheat your oven to 180°C (356°F). Bake for about 30 minutes, or until the center is set with a slight jiggle. Allow to cool completely in the pan before slicing into bars.
