How to Make Strawberry Cream Cheese Icebox Cake
- Prepare the Strawberries: Start by washing and slicing your fresh strawberries. Save a few whole ones for a beautiful garnish on top of your cake later.
- Make the Cream Cheese Filling: In a mixing bowl, blend the softened cream cheese with powdered sugar until the mixture is smooth and creamy.
- Whip the Heavy Cream: In a separate bowl, beat the heavy whipping cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture.
- Assemble Cake: Layer graham crackers in a rectangular dish, spread cream cheese filling over them, and top with strawberry slices. Repeat layers ending with cream cheese filling.
