Ingredients
  

For the Pastry
  • 1 cup Butter at room temperature
  • 3/4 cup Granulated Sugar for sweetness
  • 1 large Egg whole egg for dough
  • 2 cups All-Purpose Flour or almond flour for gluten-free
  • 1/4 teaspoon Salt to enhance flavor
For the Almond Filling
  • 1 cup Marzipan Almond Paste bring to room temperature
  • 1 large Egg White for smooth filling
For the Topping
  • 1 large Egg Yolk for glaze
  • 1/2 cup Sliced Almonds optional but recommended

Method
 

How to Make Almond Banket Bars
  1. Preheat your oven to 350°F (175°C) and grease a 7 x 11-inch baking pan.
  2. Cream the butter and granulated sugar together until light and fluffy, about 3-4 minutes. Mix in the whole egg.
  3. Combine the all-purpose flour and salt in a bowl. Gradually add the dry mixture to the creamed mixture until a soft dough forms.
  4. Spread half of the soft dough evenly in the bottom of the greased pan. Chill in the refrigerator for about 30 minutes.
  5. Beat the egg white and marzipan almond paste in a bowl until smooth. Spread over the chilled dough and chill again for 15 minutes.
  6. Top with the remaining dough and brush with beaten egg yolk. Sprinkle sliced almonds on top.
  7. Bake for 30-40 minutes, or until golden brown. Cover with foil if browning too quickly.
  8. Cool completely in the pan before slicing into bars.
