Making the Cookies
- Preheat your oven to 350°F (175°C) for even baking.

- In a large mixing bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.

- In another bowl, cream together softened butter and brown sugar until fluffy, about 3-5 minutes.

- Mix in eggs, apple cider, and vanilla extract until smooth.

- Gradually fold in the dry ingredients until just combined.

- Using a scoop, drop rounded balls of dough onto a lined baking sheet.

- Bake for 12-15 minutes until edges are golden and centers are soft.

- Prepare the caramel filling by melting butter, then adding brown sugar and heavy cream; boil for 3-5 minutes and stir in vanilla.

- Once cookies are cooled, spread caramel on one cookie and sandwich with another.
