Ingredients
  

For the Meatloaf
  • 1 cup plain dried breadcrumbs Use panko for extra texture.
  • 1 teaspoon kosher salt Sea salt can be a substitute.
  • 1 teaspoon chili powder Adjust according to taste or use smoked paprika for less heat.
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin Coriander can be used as a substitute.
  • 1 teaspoon garlic powder Fresh minced garlic can be substituted if preferred.
  • 1 teaspoon onion powder Fresh onion can replace it, adjust amount to taste.
  • 1/2 cup milk Non-dairy milk alternatives work well too.
  • 1 large egg, beaten
  • 2 tablespoons Worcestershire sauce Soy sauce can serve as a substitute.
  • 1 teaspoon unsalted liquid smoke Omit if unavailable.
  • 2 pounds 80/20 ground beef Substitute with ground turkey or chicken if desired.
  • 1 cup finely minced yellow onion Shallots can be used for a sweeter taste.
For the Glaze
  • 1 cup thick, sweet BBQ sauce Substitute with homemade BBQ sauce or hot sauce.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a rimmed sheet pan with foil for easy cleanup.
  2. Mix the dry ingredients in a large bowl: breadcrumbs, kosher salt, chili powder, black pepper, ground cumin, garlic powder, and onion powder.
  3. Combine the wet ingredients: pour in the milk, beaten egg, Worcestershire sauce, and unsalted liquid smoke.
  4. Incorporate the ground beef and minced onion into the mixture using your hands until evenly mixed.
  5. Shape the mixture into a narrow loaf on the prepared sheet pan.
  6. Pour half of the thick BBQ sauce over the meatloaf and bake for 35 minutes.
  7. Remove from the oven, add the remaining BBQ sauce on top, and bake for another 25 minutes.
  8. Let it rest for 15 minutes before slicing.
