Preparation
- Preheat the oven to 350°F (175°C) and line a rimmed sheet pan with foil for easy cleanup.
- Mix the dry ingredients in a large bowl: breadcrumbs, kosher salt, chili powder, black pepper, ground cumin, garlic powder, and onion powder.
- Combine the wet ingredients: pour in the milk, beaten egg, Worcestershire sauce, and unsalted liquid smoke.
- Incorporate the ground beef and minced onion into the mixture using your hands until evenly mixed.
- Shape the mixture into a narrow loaf on the prepared sheet pan.
- Pour half of the thick BBQ sauce over the meatloaf and bake for 35 minutes.
- Remove from the oven, add the remaining BBQ sauce on top, and bake for another 25 minutes.
- Let it rest for 15 minutes before slicing.
