How to Make Blueberry Glazed Salmon
  1. In a small saucepan, combine blueberries, balsamic vinegar, honey, Dijon mustard, and lemon zest. Simmer for 5-6 minutes until the berries burst and the glaze thickens. Remove from heat to cool slightly.
  2. Preheat oven to 400°F (200°C). Place salmon on a lined baking sheet, drizzle with olive oil, season, and coat with blueberry glaze. Bake for 12-14 minutes until cooked through. Broil for 1-2 minutes for extra caramelization.
  3. In a medium bowl, combine couscous with a pinch of salt and cover with boiling water or broth. Let sit for about 5 minutes. Fluff with a fork, then mix in lemon zest, juice, olive oil, and fresh herbs, seasoning to taste.
  4. On each plate, create a bed of couscous, top with glazed salmon, and drizzle with extra glaze. Garnish with parsley, lemon wedges, or microgreens.
