How to Make Brown Stew Salmon
- Begin by rinsing and patting dry the salmon fillets. Season both sides with salt, black pepper, and seasoning salt.
- Heat a tablespoon of oil in a non-stick skillet over medium-high heat. Fry the seasoned salmon for 5-7 minutes each side until golden brown. Remove and let drain on a wire rack.
- Discard excess oil from the skillet, leaving about 2 tablespoons. Lower heat, and sauté onions, garlic, bell peppers, tomatoes, thyme, and scotch bonnet pepper until fragrant.
- Pour in hoisin sauce, soy sauce, and chicken broth. Return salmon to the skillet, spoon sauce over it, and simmer for 2-3 minutes.
- Remove from heat and serve immediately, drizzling more sauce on top.
