How to Make Coconut Cream Doughnuts
- Combine dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, coconut sugar, ground nutmeg, kosher salt, and baking powder until well blended.
- Cut in butter. Add the cubed unsalted butter to the dry mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Mix wet ingredients. In a separate bowl, whisk together the heavy cream, unsweetened coconut cream, and large egg until smooth and creamy.
- Combine wet and dry. Gradually pour the wet mixture into the dry ingredients, mixing gently until a dough forms.
- Knead the dough. Turn the dough out onto a floured surface and knead gently for about 1-2 minutes until it’s smooth.
- Roll and cut. Roll out the dough to about ½ inch thick. Use a doughnut cutter or your favorite shapes to cut the dough into fun forms.
- Heat the oil. In a deep fryer or heavy pot, heat vegetable oil over medium heat until it reaches 350°F.
- Fry the doughnuts. Fry the doughnuts in batches until they’re golden brown on both sides, about 2-3 minutes per side.
