Method

How to Make Coconut Cream Doughnuts
  1. Combine dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, coconut sugar, ground nutmeg, kosher salt, and baking powder until well blended.
  2. Cut in butter. Add the cubed unsalted butter to the dry mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  3. Mix wet ingredients. In a separate bowl, whisk together the heavy cream, unsweetened coconut cream, and large egg until smooth and creamy.
  4. Combine wet and dry. Gradually pour the wet mixture into the dry ingredients, mixing gently until a dough forms.
  5. Knead the dough. Turn the dough out onto a floured surface and knead gently for about 1-2 minutes until it’s smooth.
  6. Roll and cut. Roll out the dough to about ½ inch thick. Use a doughnut cutter or your favorite shapes to cut the dough into fun forms.
  7. Heat the oil. In a deep fryer or heavy pot, heat vegetable oil over medium heat until it reaches 350°F.
  8. Fry the doughnuts. Fry the doughnuts in batches until they’re golden brown on both sides, about 2-3 minutes per side.
