How to Make Chinese Claypot Rice
- Soak mushrooms in hot water until soft, about 30 minutes. Reserve soaking water for rice.
- Rinse the uncooked white rice under cold water until water runs clear, usually 2-3 times.
- Layer all ingredients in rice cooker, starting with rice, then mushrooms, sausage, ginger, shallot, and garlic.
- Pour in chicken stock until it reaches the first line on your index finger when placed on top of the rice.
- Close the rice cooker lid and start the cooking process.
- Once the rice is cooked, keep covered for an additional 5-10 minutes to let flavors meld.
- Fluff the rice with a fork, then top with sliced green onions before serving.
