How to Make Chinese Claypot Rice
  1. Soak mushrooms in hot water until soft, about 30 minutes. Reserve soaking water for rice.
  2. Rinse the uncooked white rice under cold water until water runs clear, usually 2-3 times.
  3. Layer all ingredients in rice cooker, starting with rice, then mushrooms, sausage, ginger, shallot, and garlic.
  4. Pour in chicken stock until it reaches the first line on your index finger when placed on top of the rice.
  5. Close the rice cooker lid and start the cooking process.
  6. Once the rice is cooked, keep covered for an additional 5-10 minutes to let flavors meld.
  7. Fluff the rice with a fork, then top with sliced green onions before serving.
