Preparation Steps
- Preheat oven to 350°F (175°C). Prepare an 8-inch square baking pan by lining it with parchment paper or greasing it with cooking spray to prevent sticking.
- Whisk dry ingredients in a medium bowl. Combine quick-cooking rolled oats, whole wheat flour, baking powder, baking soda, fine salt, and cinnamon until well blended.
- Mix wet ingredients in a large bowl. Mash the very ripe bananas, then mix in the egg, avocado or vegetable oil, and maple syrup. Squeeze excess moisture from the grated zucchini before adding it in.
- Combine mixtures gently. Add the dry ingredients to the wet mixture and stir until just combined, then fold in the mini chocolate chips.
- Pour and smooth the batter into the prepared pan. Optionally sprinkle additional chocolate chips on top before baking.
- Bake for 18 to 25 minutes, until golden brown and a toothpick inserted in the center comes out clean. Let the bars cool completely in the pan before cutting into squares.
