  • 1 cup whole wheat flour or all-purpose flour, can replace with gluten-free flour

  • 1/2 teaspoon fine salt enhances flavor
  • 1 teaspoon cinnamon can be omitted for a more neutral flavor
  • 2 large very ripe bananas or unsweetened applesauce
  • 1 large egg for a vegan option, use chia egg (1 TBSP chia seeds mixed with 3 TBSP water)
  • 1/4 cup avocado or vegetable oil can substitute with melted coconut oil
  • 1/4 cup maple syrup or honey, adjust quantity for desired sweetness level
  • 1 cup grated zucchini squeeze excess water for best results
  • 1/2 cup mini chocolate chips or regular-sized, omit or reduce for a lower-sugar version

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C). Prepare an 8-inch square baking pan by lining it with parchment paper or greasing it with cooking spray to prevent sticking.
  2. Whisk dry ingredients in a medium bowl. Combine quick-cooking rolled oats, whole wheat flour, baking powder, baking soda, fine salt, and cinnamon until well blended.
  3. Mix wet ingredients in a large bowl. Mash the very ripe bananas, then mix in the egg, avocado or vegetable oil, and maple syrup. Squeeze excess moisture from the grated zucchini before adding it in.
  4. Combine mixtures gently. Add the dry ingredients to the wet mixture and stir until just combined, then fold in the mini chocolate chips.
  5. Pour and smooth the batter into the prepared pan. Optionally sprinkle additional chocolate chips on top before baking.
  6. Bake for 18 to 25 minutes, until golden brown and a toothpick inserted in the center comes out clean. Let the bars cool completely in the pan before cutting into squares.
