How to Make Coyotas De Sonora
  1. Preheat your oven to 350°F (175°C) to ensure it's ready for those heavenly pastries.
  2. Mix the dry ingredients by combining 500 g of all-purpose flour, 100 g of sugar, and 1 tsp of baking powder in a large bowl.
  3. Combine the wet ingredients by whisking together 100 g of melted butter, 1 large egg, and 100 ml of milk in a separate bowl.
  4. Combine the wet and dry mixtures. Pour the wet ingredients into the dry ingredients, stirring gently until a dough forms.
  5. Prepare the filling by mixing 200 g of brown sugar, 1 tsp of cinnamon, and 1 tsp of vanilla extract in a small bowl.
  6. Roll out the dough on a floured surface until it's about ¼ inch thick. Use a round cutter or glass to cut out circles.
  7. Fill each circle with a generous spoonful of the brown sugar mixture. Fold the dough over and seal the edges.
  8. Bake on a lined baking sheet in your preheated oven for about 15-20 minutes or until the pasties are lightly golden brown.
