Ingredients
  

For the Tortillas
  • 8 pieces Corn Tortillas Use pre-packaged for convenience or make your own for a personal touch.
  • 2 tablespoons Vegetable Oil Can substitute with olive oil for a healthier option.
For the Sauce
  • 2 cups Tomato Sauce Fresh is preferred for the best taste.
  • 1 medium Onion Can substitute with shallots for a milder flavor.
  • 3 cloves Garlic Fresh minced is best, or powdered garlic as a quick substitute.
  • 1 teaspoon Cumin Adjust according to preference.
  • 1 teaspoon Chili Powder Adjust according to preference.
  • 1 teaspoon Salt Use sea salt for enhanced flavor.
  • 1/2 teaspoon Pepper
For the Filling
  • 2 cups Shredded Cheese (Mexican blend or Cheddar) Can swap for vegan cheese to keep it dairy-free.
  • 1/4 cup Fresh Cilantro Can substitute with parsley if needed.
For Topping
  • 1/2 cup Sour Cream Greek yogurt can be used for a lighter alternative.

Method
 

Preparation
  1. Heat vegetable oil in a skillet over medium heat until it shimmers.
  2. Lightly fry the corn tortillas for 10-15 seconds on each side, then drain on paper towels.
  3. In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until translucent.
  4. Pour in tomato sauce, cumin, chili powder, salt, and pepper. Stir well and let it simmer for 5 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. Spread a thin layer of the tomato mixture in a baking dish.
  7. Dip each fried tortilla into the sauce, layer them in the dish, and sprinkle cheese and cilantro in between.
  8. Top the final layer with cheese and bake for 15-20 minutes, or until the cheese is bubbly.
  9. Garnish with additional cilantro and sour cream before serving.
