Preparation
- Heat vegetable oil in a skillet over medium heat until it shimmers.
- Lightly fry the corn tortillas for 10-15 seconds on each side, then drain on paper towels.
- In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until translucent.
- Pour in tomato sauce, cumin, chili powder, salt, and pepper. Stir well and let it simmer for 5 minutes.
- Preheat your oven to 350°F (175°C).
- Spread a thin layer of the tomato mixture in a baking dish.
- Dip each fried tortilla into the sauce, layer them in the dish, and sprinkle cheese and cilantro in between.
- Top the final layer with cheese and bake for 15-20 minutes, or until the cheese is bubbly.
- Garnish with additional cilantro and sour cream before serving.
