- Fry bacon in a skillet over medium heat until crispy, about 6-8 minutes. Once done, chop into small pieces and set aside; reserve drippings for flavor.
- In a mixing bowl, combine softened cream cheese, cheddar cheese, chives, minced garlic, salt, and black pepper. Mix until fully blended.
- Wearing kitchen gloves, slice the jalapeños in half lengthwise and remove seeds and membranes.
- Generously fill each jalapeño half with the cream cheese mixture and level it with the edges.
- Mix panko breadcrumbs with melted butter or bacon drippings and chopped bacon. Spoon this over the stuffed jalapeños.
- Arrange the stuffed jalapeños on a baking sheet and bake in a preheated oven at 400°F (204°C) for 17-20 minutes.
- Cool for about 10 minutes before serving.
