Ingredients
  

For the Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Jerk seasoning
  • 2 tablespoons Olive oil for rubbing
  • 1 teaspoon Ground allspice
  • 1 teaspoon Ground thyme
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
For the Coconut Rice
  • 1 can Coconut milk
  • 1 cup Long-grain white rice
  • 1 tablespoon Coconut oil
For the Mango Salsa
  • 1 cup Mango diced
  • 1/2 cup Red onion chopped
  • 1/4 cup Fresh cilantro chopped
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey
  • 1/2 cup Corn kernels charred
  • 1/2 teaspoon Ground ginger

Method
 

Preparation Steps
  1. Preheat the grill or stovetop grill pan to medium-high heat.
  2. Combine jerk seasoning ingredients in a bowl, mixing well.
  3. Rub the chicken breasts with olive oil, then coat with the jerk spice mixture.
  4. Rinse the long-grain white rice until the water runs clear and set aside.
  5. Cook rice with coconut milk in a saucepan over medium heat until liquid is absorbed.
  6. Remove rice from heat and stir in coconut oil.
  7. Prepare the mango salsa by mixing mango, red onion, cilantro, lime juice, and honey in a bowl.
  8. Sauté the corn until charred, then add it to the salsa.
  9. Grill the marinated chicken until fully cooked, about 6-7 minutes per side.
  10. Let the chicken rest for a few minutes before slicing.
  11. Assemble bowls with coconut rice, sliced chicken, and mango salsa on top.
