Method

How to Make Namkeen Masala Sev
  1. Blend roasted gram into a fine powder. This ensures a smooth texture for your Namkeen Masala Sev, creating a delightful base for the dough.
  2. Mix in a large bowl. Combine rice flour, chickpea flour, powdered gram, and butter. Stir until everything is well incorporated and you achieve a crumbly consistency.
  3. Add flavor enhancers. Toss in black sesame seeds, cumin seeds, asafoetida, salt, and red chile powder. Mix thoroughly to ensure the spices are evenly distributed.
  4. Pour in water gradually. As you knead, create a soft, smooth, non-sticky dough. Aim for a consistency that holds together without being overly wet.
  5. Heat oil in a deep frying pan. Get it to about 350°F (175°C) over medium heat, perfect for achieving that golden color without burning.
  6. Grease a chakli mold. Fill it tightly with the prepared dough. Shape your Sev into circular forms and gently drop them into the hot oil.
  7. Fry each batch for about 2 minutes. Let them cook until golden brown on each side, ensuring that perfect crunch!
  8. Drain on paper towels. Allow the fried sev to cool completely before enjoying the delightful crunch and flavor.
