How to Make Pancake Poppers
  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Combine in a bowl the dry ingredients: all-purpose flour, granulated sugar, baking powder, and salt. Whisk them together.
  3. Whisk the wet ingredients in another bowl: milk, eggs, melted butter, and vanilla extract until smooth.
  4. Fold the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Add your favorite mix-ins if desired, such as blueberries or chocolate chips.
  6. Fill the mini muffin tin cavities ¾ full with the batter.
  7. Bake for 12–15 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool for about 5 minutes in the tin before gently removing the poppers.
