Ingredients
  

Meatball Mixture
  • 2 cups Short Grain Sweet (Glutinous) Rice Soaked for 1.5 to 3 hours.
  • 1 block Extra Firm Tofu Drained and pressed.
  • 1 pound Ground Pork Can substitute ground turkey or chicken.
  • 3 cloves Garlic (minced) Fresh garlic preferred.
  • 1 teaspoon Ginger (minced) Ground ginger can be substituted.
  • 6 ounces Frozen Shrimp Thawed and chopped.
  • 1 stalk Celery (finely chopped) Can substitute with chopped carrots.
  • 1 teaspoon Sea Salt Adjust to taste.
  • 1 teaspoon Five Spice or Thirteen Spice Powder Optional.
  • 1 teaspoon Sugar Adjust based on preference.
  • 1 tablespoon Sesame Oil Can substitute with vegetable oil.
Seasoning
  • 2 tablespoons Oyster Sauce Can substitute with hoisin sauce.
  • 2 tablespoons Soy Sauce Low-sodium variety is optional.
  • 2 stalks Scallion (thinly sliced) For garnish.
For Steaming
  • 8 leaves Nappa or Green Cabbage Leaves To line the steamer.

Method
 

Preparation Steps
  1. Soak glutinous rice in water for 1.5 to 3 hours.
  2. Drain tofu, press out moisture, mash, and combine with ground pork, garlic, ginger, and vegetables; refrigerate for 30 minutes.
  3. Blanch cabbage leaves briefly, form meatballs, roll in soaked rice, and place in steamer.
  4. Steam meatballs for 15 minutes or use an Instant Pot on the steaming function.
  5. Serve warm with dipping sauces.
