  • 2 cups All-Purpose Flour or gluten-free flour blend
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground Cinnamon or pumpkin pie spice
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Ground Cloves or allspice
  • 1/2 cup Vegetable Oil or canola oil
  • 1 cup Granulated Sugar or brown sugar
  • 1 cup Pumpkin Puree not pumpkin pie filling
  • 2 large Eggs
For the Maple Glaze
  • 1/4 cup Maple Syrup or honey
  • 1 cup Powdered Sugar

Method
 

Preparation
  1. In a large mixing bowl, combine the dry ingredients: all-purpose flour, baking soda, baking powder, salt, and spices.
  2. In another bowl, whisk together the wet ingredients: vegetable oil, granulated sugar, pumpkin puree, and eggs until smooth and creamy.
  3. Gently fold the dry ingredients into the wet mixture using a spatula. Mix until just combined.
  4. Pour the batter into a greased loaf pan and bake in a preheated oven at 350°F (175°C) for about 60 minutes.
  5. Let the bread cool in the pan for about 10 minutes before transferring to a wire rack.
  6. For the glaze, combine powdered sugar and maple syrup in a bowl and mix until smooth, then drizzle over the cooled bread.
