  • 2 cups Rolled Oats opt for old-fashioned oats
  • 1/2 cup Maple Syrup honey or agave can be substituted
  • 1/2 cup Nut Butter almond or peanut butter works well
For the Binding
  • 1 large Egg or substitute with a flax egg for vegan
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
For the Spices
  • 2 teaspoons Pumpkin Pie Spice
Optional Mix-ins
  • 1/2 cup Chocolate Chips
  • 1/2 cup Nuts chopped
  • 1/2 cup Dried Fruit such as cranberries or raisins

How to Make Pumpkin Oatmeal Bars
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, maple syrup, nut butter, egg (or flax egg), and a splash of vanilla until smooth.
  3. Add in the rolled oats, baking powder, pumpkin pie spice, and a pinch of salt. Stir until well combined.
  4. Gently fold in your choice of chocolate chips, nuts, or dried fruits.
  5. Spread the mixture in the prepared pan and bake for 28-32 minutes, or until golden at the edges.
  6. Allow to cool completely before slicing into 12 squares or rectangles.
