How to Make Pumpkin Oatmeal Bars
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a large bowl, whisk together the pumpkin puree, maple syrup, nut butter, egg (or flax egg), and a splash of vanilla until smooth.
- Add in the rolled oats, baking powder, pumpkin pie spice, and a pinch of salt. Stir until well combined.
- Gently fold in your choice of chocolate chips, nuts, or dried fruits.
- Spread the mixture in the prepared pan and bake for 28-32 minutes, or until golden at the edges.
- Allow to cool completely before slicing into 12 squares or rectangles.
