Method
 

Instructions
  1. Preheat your oven according to the instructions on the puff pastry package, typically around 400°F.
  2. Mix the cream cheese, granulated sugar, lemon juice, almond extract, and a pinch of salt in a bowl until smooth.
  3. Roll out the thawed puff pastry on a lightly floured surface, then cut it into squares of about 4 inches.
  4. Spoon a generous portion of the cream cheese mixture into the center of each pastry square.
  5. Top each dollop of cream cheese with a teaspoon of raspberry jam.
  6. Fold the corners of each pastry square over the filling, sealing them to create pockets.
