Method
To Prepare the Tofu
- Slice the egg tofu into 1.5cm rounds. Gently pat each piece dry to remove excess moisture.
- Dredge the tofu slices in your choice of rice flour, corn starch, or potato flour.
- Heat oil in a pot until hot enough (at least 160°C/320°F).
- Carefully add a few pieces of coated tofu at a time and fry until golden brown.
To Prepare the Sauce
- Melt unsalted butter over medium heat. Sauté minced garlic, curry leaves, and red chili until fragrant.
- Stir in the mashed salted egg yolks into the fragrant mixture until bubbly and creamy.
- Taste and adjust the sauce with sugar and optional fish sauce.
- Pour the sauce generously over the fried tofu and serve with steamed white rice.
