For the Base
  • 2 tablespoons Olive oil
  • 8 ounces Cremini mushrooms
  • 4 cups Spinach leaves
  • 2 cloves Garlic minced
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
For the Eggs
  • 6 large Large eggs
  • 1/2 cup Milk
For the Finish
  • 4 ounces Goat cheese crumbled
  • 2 tablespoons Green onions sliced
  • 2 tablespoons Chives optional

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Sauté the mushrooms in a large skillet with olive oil over medium heat for 5-7 minutes until golden brown.
  3. Add the minced garlic and spinach leaves to the skillet and cook until the spinach wilts, about 2-3 minutes.
  4. Whisk together the large eggs, milk, salt, and black pepper until frothy.
  5. Pour the egg mixture over the sautéed vegetables and gently stir to combine.
  6. Crumble the goat cheese over the mixture.
  7. Cook on the stovetop for 3-5 minutes until the edges begin to set.
  8. Transfer the skillet to the oven and bake for 20-25 minutes until puffy and golden.
  9. Remove from the oven and let cool slightly before serving. Garnish with green onions and chives.
