Ingredients
  

For the Tofu
  • 1 block Extra-Firm Tofu Pressed to remove excess moisture
  • 1/2 cup Cornstarch For coating the tofu
  • 2 Tbsp. Neutral Oil Vegetable or canola oil recommended
  • To taste tsp. Kosher Salt
For the Sauce
  • 1/2 cup Canned Pineapple Chunks
  • 1/3 cup Pineapple Juice Fresh pineapple can be used as an alternative
  • 1/3 cup Low-Sodium Vegetable Broth Choose low-sodium varieties
  • 3 Tbsp. Unseasoned Rice Vinegar Apple cider vinegar can be substituted
  • 2 Tbsp. Reduced-Sodium Soy Sauce or Tamari Tamari ensures gluten-free
  • 1 Tbsp. Ketchup Provides sweetness
  • 1 Tbsp. Light Brown Sugar Agave syrup can be used as an alternative
For the Vegetables
  • 1 small Red Onion Yellow onions can be used as a substitute
  • 1 medium Green Bell Pepper Red or yellow peppers can be used
  • 1 medium Red Bell Pepper
  • 1 inch Ginger Peeled, provides zesty flavor
  • 2 cloves Garlic Peeled

Method
 

How to Make Sweet & Sour Tofu
  1. Press the Tofu: Start by removing excess moisture from the tofu. Place it between two clean towels and apply a weight on top for about 30-45 minutes.
  2. Prepare Sauce: In a bowl, mix together the pineapple juice, vegetable broth, rice vinegar, soy sauce, ketchup, and brown sugar. Stir until well combined.
  3. Tear & Coat Tofu: Tear the pressed tofu into bite-sized pieces and toss them in cornstarch until evenly coated.
  4. Heat Oil: In a large pan, heat the neutral oil over medium-high heat until a drop of water sizzles in the pan.
  5. Fry Tofu: Carefully add the coated tofu to the hot pan and fry until golden and crispy, about 4-5 minutes.
  6. Sauté Vegetables: Remove the crispy tofu. Toss in the onions, garlic, ginger, and bell peppers. Sauté until tender and aromatic, around 3-4 minutes.
  7. Combine: Pour the prepared sauce over the sautéed vegetables, add the crispy tofu back, and simmer until everything is heated through.
