How to Make Taco Soup
- In a large pot, heat oil over medium heat and add the chopped onion. Cook until it becomes translucent, about 3-4 minutes.
- Incorporate the minced garlic and diced jalapeno into the pot. Stir and let them cook until fragrant, about 1-2 minutes.
- Add the ground meat to the pot, breaking it up with a spoon. Cook until browned, around 5-7 minutes.
- Stir in the taco seasoning, chopped poblano pepper, sweet corn, black beans (with juice), crushed tomatoes, tomato paste, and broth.
- Season with salt, ancho chili powder, and cumin. Bring the pot to a boil, then reduce heat and let it simmer for 20 minutes.
