Preparation
- Preheat the oven to 350°F.
- Sauté the ground beef and onion in a skillet over medium heat for about 5-7 minutes, until browned.
- Mix in the black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and pepper. Let simmer for 5 minutes.
- Combine the cornmeal, milk, and egg in a bowl, stirring until smooth.
- Grease a 9x13-inch baking dish and pour half of the cornmeal mixture into the bottom.
- Layer in the beef mixture followed by the remaining cornmeal mixture.
- Sprinkle the top with shredded cheddar cheese and black olives.
- Bake for 30-35 minutes until golden brown. Let cool for 10 minutes before serving. Garnish with fresh cilantro.
