Ingredients

  • 1 lb Ground Beef can substitute with plant-based crumbles

  • 1 can Diced Tomatoes with Green Chilies use regular diced tomatoes for less heat
  • 2 tbsp Chili Powder adjust for heat preferences
  • 1 tsp Cumin omit if unavailable
  • 1 tsp Garlic Powder can use fresh garlic
  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper adjust to taste
For the Cornmeal Topping
  • 1 cup Cornmeal use gluten-free if needed
  • 1 cup Milk can substitute with almond or oat milk
  • 1 large Egg can substitute with flax egg or applesauce
For Toppings
  • 1 cup Shredded Cheddar Cheese optional dairy-free cheese for a vegan option
  • 0.5 cup Black Olives omit if undesired
  • 0.25 cup Fresh Cilantro can substitute with parsley

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Sauté the ground beef and onion in a skillet over medium heat for about 5-7 minutes, until browned.
  3. Mix in the black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and pepper. Let simmer for 5 minutes.
  4. Combine the cornmeal, milk, and egg in a bowl, stirring until smooth.
  5. Grease a 9x13-inch baking dish and pour half of the cornmeal mixture into the bottom.
  6. Layer in the beef mixture followed by the remaining cornmeal mixture.
  7. Sprinkle the top with shredded cheddar cheese and black olives.
  8. Bake for 30-35 minutes until golden brown. Let cool for 10 minutes before serving. Garnish with fresh cilantro.
