Ingredients
  

For the Filling
  • 1 pound Ground Beef or ground turkey/lentils for lighter option
  • 1 cup Chopped Onion or shallots for milder flavor
  • 1 can Black Beans rinsed and drained
  • 1 can Diced Tomatoes with Green Chilies or fresh tomatoes and jalapeños
  • 2 tablespoons Chili Powder add cayenne pepper for extra kick
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Powder or fresh garlic for more flavor
  • to taste Salt
  • to taste Black Pepper
For the Topping
  • 1 cup Cornmeal ensure gluten-free if necessary
  • 1 cup Milk or plant-based milk
  • 1 large Egg or flax egg for vegan option
  • 1 cup Shredded Cheddar Cheese or vegan cheese
  • 1/2 cup Black Olives optional
  • to taste Chopped Cilantro for garnish, optional

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Brown the ground beef with the chopped onion in a large skillet over medium heat for 5-7 minutes. Drain excess fat.
  3. Combine the black beans, diced tomatoes, chili powder, ground cumin, garlic powder, salt, and black pepper in the skillet. Let simmer for about 5 minutes.
  4. Mix the cornmeal, milk, and egg in a separate bowl until smooth.
  5. Grease a 9×13-inch baking dish. Pour half of the cornmeal mixture into the dish, spreading it evenly across the bottom.
  6. Layer the beef mixture over the cornmeal base.
  7. Top with the remaining cornmeal mixture, spreading it evenly.
  8. Sprinkle shredded cheddar cheese and black olives on top.
  9. Bake for 30-35 minutes until the top is golden brown.
  10. Cool for 10 minutes before slicing. Garnish with chopped cilantro.
