Preparation
- Preheat the oven to 350°F.
- Brown the ground beef with the chopped onion in a large skillet over medium heat for 5-7 minutes. Drain excess fat.
- Combine the black beans, diced tomatoes, chili powder, ground cumin, garlic powder, salt, and black pepper in the skillet. Let simmer for about 5 minutes.
- Mix the cornmeal, milk, and egg in a separate bowl until smooth.
- Grease a 9×13-inch baking dish. Pour half of the cornmeal mixture into the dish, spreading it evenly across the bottom.
- Layer the beef mixture over the cornmeal base.
- Top with the remaining cornmeal mixture, spreading it evenly.
- Sprinkle shredded cheddar cheese and black olives on top.
- Bake for 30-35 minutes until the top is golden brown.
- Cool for 10 minutes before slicing. Garnish with chopped cilantro.
