Preparation
- Preheat your oven according to the instructions on the puff pastry package.
- Gently roll out the puff pastry on a clean surface and place it on a baking sheet.
- In a mixing bowl, combine the whole milk ricotta cheese, grated Parmigiano-Reggiano, kosher salt, black pepper, minced basil, garlic powder, and dried oregano. Stir until creamy.
- Spread the ricotta filling evenly over the puff pastry, leaving a small border around the edges.
- Arrange the halved mini heirloom tomatoes on top of the ricotta mixture, cut side up.
- Lightly drizzle olive oil over the tomatoes and sprinkle with flaky sea salt.
- Place your baking sheet in the oven and bake according to the puff pastry package instructions until golden brown.
- Once baked, remove the tartlets from the oven and garnish with whole basil leaves.
