- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Mix the graham cracker or chocolate cookie crumbs with the melted butter in a bowl. Press this mixture into the bottom of the prepared pan.
- Beat together the cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla extract, pumpkin spice, and sour cream, mixing until well combined.
- Pour the batter over your prepared crust and smooth the top with a spatula.
- Bake in the preheated oven for 50-55 minutes until edges are set and the center is slightly jiggly.
- Cool the cheesecake completely at room temperature, then refrigerate for at least 4 hours, or overnight.
- Decorate with green frosting and mini pumpkin candies.
- Slice and serve your Pumpkin Patch Cheesecake.
