Method
 

Instructions
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Mix the graham cracker or chocolate cookie crumbs with the melted butter in a bowl. Press this mixture into the bottom of the prepared pan.
  3. Beat together the cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla extract, pumpkin spice, and sour cream, mixing until well combined.
  4. Pour the batter over your prepared crust and smooth the top with a spatula.
  5. Bake in the preheated oven for 50-55 minutes until edges are set and the center is slightly jiggly.
  6. Cool the cheesecake completely at room temperature, then refrigerate for at least 4 hours, or overnight.
  7. Decorate with green frosting and mini pumpkin candies.
