  • 1/2 teaspoon baking soda
  • 1/3 cup neutral oil
  • 1 large egg yolk
For Decoration (Optional)
  • 1/2 cup roasted unsalted almonds

Method
 

How to Make Chinese Almond Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the almond meal, all-purpose flour, sugar, kosher salt, baking powder, and baking soda in a large mixing bowl. Stir until well-mixed.
  3. Gradually add the neutral oil to the dry ingredients, mixing gently until the dough comes together.
  4. Adjust the dough consistency by adding more oil if it feels too crumbly.
  5. Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  6. Decorate with roasted unsalted almonds by pressing them into the tops of the dough balls.
  7. Bake in your preheated oven for 12-15 minutes, or until golden brown.
