How to Make Chinese Almond Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the almond meal, all-purpose flour, sugar, kosher salt, baking powder, and baking soda in a large mixing bowl. Stir until well-mixed.
- Gradually add the neutral oil to the dry ingredients, mixing gently until the dough comes together.
- Adjust the dough consistency by adding more oil if it feels too crumbly.
- Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Decorate with roasted unsalted almonds by pressing them into the tops of the dough balls.
