  • 1 pound cod flaky texture, fresh preferred
  • 2 tablespoons taco seasoning store-bought or homemade
For the Tortillas
  • 8 pieces tortillas corn or flour, based on preference
For the Toppings
  • 4 cups coleslaw mix pre-made mix saves prep time
  • 1 cup chipotle crema made from sour cream, lime juice, and chipotle powder
  • 2 pieces lime wedges for squeezing on tacos

Method
 

Preparation
  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the cod into 1-inch wide strips and toss them in taco seasoning.
  3. Arrange the seasoned fish on the prepared baking sheet and bake for 6-8 minutes until the fish is opaque and flakes easily.
  4. Warm the tortillas while the fish is baking, either in a skillet or wrapped in a damp paper towel in the microwave for about 30 seconds.
  5. Assemble your tacos by filling each tortilla with fish strips, coleslaw, a squeeze of lime, and drizzle with chipotle crema.
