Preparation
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the cod into 1-inch wide strips and toss them in taco seasoning.
- Arrange the seasoned fish on the prepared baking sheet and bake for 6-8 minutes until the fish is opaque and flakes easily.
- Warm the tortillas while the fish is baking, either in a skillet or wrapped in a damp paper towel in the microwave for about 30 seconds.
- Assemble your tacos by filling each tortilla with fish strips, coleslaw, a squeeze of lime, and drizzle with chipotle crema.
