For the Strawberry Frosting
  • 1 cup Strawberry Frosting Use homemade or vegan-friendly store-bought options.
  • Vegan-Friendly Heart Sprinkles Optional but adds a fun touch.

Method
 

Baking Steps
  1. Preheat the oven to 180°C (350°F) or 160°C (325°F) for fan ovens.
  2. Line an 8x10-inch baking tin with baking paper.
  3. Mix soy milk and apple cider vinegar in a small bowl; let it sit for 5 minutes.
  4. Combine flour, baking soda, and caster sugar in a large bowl and whisk them together.
  5. Add curdled soy milk, melted margarine, and vanilla extract to the dry ingredients and mix until smooth.
  6. Pour the batter into the prepared tin and spread evenly.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Cool the cake in the tin for 10 minutes before transferring to a wire rack.
  9. Frost the cool cake with the strawberry frosting.
  10. Slice the cake into 12 squares and enjoy!
