For the Casserole
  • 3 cups Shredded Chicken use rotisserie or leftover chicken for convenience
  • 1 can Cream of Chicken Soup can substitute with gluten-free version or homemade
  • 1 cup Sour Cream substitute with Greek yogurt for a lighter option
  • 1 can Rotel (diced tomatoes with green chilies) provides flavor and moisture
  • 1 packet Taco Seasoning can use homemade taco spice mix
  • 2 cups Shredded Cheese use cheddar or cheese blend, low-fat works too
  • 2 cups Crushed Doritos can substitute with favorite tortilla chips
Optional Toppings
  • 1 bunch Green Onions sprinkle on top before serving
  • 1 cup Sour Cream use as a topping

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x11 or 9x13 baking dish.
  2. Mix together in a large bowl the shredded chicken, cream of chicken soup, sour cream, Rotel, taco seasoning, and half of the shredded cheese.
  3. Layer crushed Doritos evenly at the bottom of the greased baking dish.
  4. Spread the chicken mixture evenly over the Doritos.
  5. Top with the remaining shredded cheese and add another layer of crushed Doritos.
  6. Bake in the preheated oven for 25–30 minutes until the cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving. Garnish with green onions or sour cream if desired.
