Muffin Preparation

  3. Mix together the Greek yogurt, baking soda, salt, grapeseed oil, sugar, egg, and vanilla extract with the mashed bananas.
  4. Gradually incorporate the all-purpose flour and cocoa powder into the wet mixture, stirring gently.
  5. Fold in the semisweet mini chocolate chips gently.
  6. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the muffins in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
