  • 500 g Ground Chicken Substitution: Ground pork, turkey, or extra firm tofu for a vegetarian option.
  • 5 Spring Onions Use shallots for a sweeter note.
  • 100 g Shiitake Mushrooms Substitution: Any mushrooms, such as cremini or button, can work well.
  • 2 cloves Garlic, minced Fresh is best, but garlic powder can replace as an alternative.
  • 1 inch Ginger, minced Substitution: Ground ginger, though fresh is recommended.
  • 2 tbsp Light Soy Sauce Substitution: Tamari for a gluten-free option.
  • 1 tbsp Rice Wine Vinegar Substitution: Apple cider vinegar can be used.
  • 1 tbsp Sesame Oil Substitution: Any neutral oil can work, but flavor will differ.
  • 1 tsp Sugar Substitution: Honey or agave nectar may be alternatives.
  • 0.5 tsp Ground Black Pepper Use white pepper for a different flavor profile.
  • 0.5 tsp MSG Optional; skip for a no-MSG dish.
For the Assembly
  • 27 Dumpling Wrappers Homemade wrappers can be an alternative, or use rice paper for a gluten-free version.
  • 75 ml Water Ensure not too much water to prevent sogginess.
For the Sauce
  • 1 tbsp Tahini Substitution: Peanut butter for a different flavor.
  • 0.5 Lime Juice Fresh lime is preferred, but bottled juice can be used.
  • Chili Oil Optional; adjust according to spice preference.
  • 10 g Chives, finely sliced Substitution: Green onions or parsley may work.
  • Sesame Seeds Optional for garnish.

Preparation
  1. In a large bowl, combine the ground chicken, spring onions, shiitake mushrooms, minced garlic, ginger, soy sauce, rice vinegar, sesame oil, sugar, black pepper, and optional MSG. Mix thoroughly until all ingredients are well incorporated.
  2. In a 7"x9" heatproof dish, spread 1/3 of the meat filling evenly. Place 9 dumpling wrappers on top, followed by another layer of the meat filling, and repeat with the wrappers until all ingredients are used. Pour 75ml of water over the final layer for steaming.
  3. Carefully place the dish in a steaming basket over a pot of boiling water. Cover and steam on high heat for about 17 minutes, until the dumpling wrappers are wrinkled and thoroughly cooked through.
  4. While the dumpling lasagna is steaming, whisk together tahini, sugar, soy sauce, lime juice, sesame oil, and minced garlic in a separate bowl until smooth and well-combined.
  5. Once the steaming is complete, gently remove the dish from the steamer. Drizzle with the prepared tahini sauce, add a touch of chili oil for spice, and garnish with sliced chives and sesame seeds before serving. Enjoy this delightful dish hot!
