  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 1 large Beaten Egg or flaxseed meal/applesauce for vegan alternative
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All-Purpose Flour or gluten-free flour blend for gluten-free option
  • 1 teaspoon Ground Cinnamon
For the Cinnamon Swirl
  • 1/4 cup Brown Sugar
  • 1 teaspoon Ground Cinnamon adjust to taste

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth, then mix in the melted butter.
  3. Stir in the baking soda and salt, followed by granulated sugar, beaten egg, and vanilla extract.
  4. Gently fold in the flour until just mixed to maintain a moist crumb.
  5. Mix brown sugar and ground cinnamon in a separate bowl for the cinnamon swirl.
  6. Layer half of the batter into the prepared pan, sprinkle with half of the cinnamon-sugar mix, then add the remaining batter and finish with the rest of the cinnamon-sugar mixture on top.
  7. Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
