  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1 cup Green Bell Pepper
  • 1 small Red Onion Substitute with yellow or white onion if desired.
  • 2 tablespoons Fajita Seasoning Taco seasoning can be used as a substitute.
  • 8 oz Cream Cheese Dairy-free cream cheese can be used for a dairy-free option.
  • 1 cup Shredded Cheese (Cheddar or Mexican Blend) Monterey Jack cheese can be used for a gooier finish.
  • 2 tablespoons Olive Oil Used to grease the baking dish.

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C) and generously grease a 9x13-inch baking dish with olive oil.
  2. Slice the red, yellow, and green bell peppers along with the small red onion into thin strips.
  3. Toss the cubed chicken breasts with fajita seasoning in a mixing bowl until evenly coated.
  4. Layer the seasoned chicken across the bottom of the greased baking dish.
  5. Top the chicken with the sliced onions and bell peppers.
  6. Dot cream cheese cubes over the top of the layered ingredients and sprinkle the shredded cheese across the top.
  7. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes.
  8. Rest for 5 minutes before serving.
