- Preheat the oven to 375°F (190°C) and generously grease a 9x13-inch baking dish with olive oil.
- Slice the red, yellow, and green bell peppers along with the small red onion into thin strips.
- Toss the cubed chicken breasts with fajita seasoning in a mixing bowl until evenly coated.
- Layer the seasoned chicken across the bottom of the greased baking dish.
- Top the chicken with the sliced onions and bell peppers.
- Dot cream cheese cubes over the top of the layered ingredients and sprinkle the shredded cheese across the top.
- Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes.
- Rest for 5 minutes before serving.
