  • 2 lbs Potatoes russets or Yukon golds recommended
  • 1/2 cup Milk substitute with cream or a plant-based option
  • 1/2 cup Sour Cream optional, plain Greek yogurt can be a healthier alternative
  • 1 cup Cheddar Cheese aged cheddar provides a sharper taste
For Garnish
  • 2 tbsp Chives green onions can be used as an alternative

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and butter. Season top sirloin with salt and pepper, then sear for 6-8 minutes until browned.
  3. Add onions and carrots to the skillet, stirring until onions become translucent and carrots soften (around 4-5 minutes).
  4. Sprinkle flour over the mixture, cooking for another 1-2 minutes.
  5. Pour in apple cider and beef broth, bringing to a boil while scraping the browned bits from the skillet.
  6. Transfer the mixture to a Dutch oven, cover, and bake for 60-90 minutes until beef is tender.
  7. Meanwhile, boil potatoes in a pot for 20-25 minutes until tender. Drain, then mash with milk, sour cream, and cheddar cheese until smooth.
  8. On a plate, layer mashed potatoes and top generously with apple cider stew. Garnish with chives.
