Method
 

Making Flaky Banana Puri
  1. In a large mixing bowl, combine the cake wheat flour and baking powder. Cut in the butter until crumbly, then mix the ice water with lemon juice and gradually add it to form a dough. Knead until smooth, cover, and refrigerate for at least 3 hours.
  2. In a saucepan, combine water, granulated sugar, ground cardamom, and rose essence. Bring to a simmer and cook for about 10 minutes until the syrup thickens and is glossy. Set aside to cool.
  3. Divide the chilled dough into eight equal pieces. Roll each piece into thin squares, brush with melted butter, sprinkle cornflour, and roll them into a Swiss roll shape. Cut the rolls into 1.5 cm pieces.
  4. Heat vegetable oil in a deep pan to medium-low. Fry two puris at a time, cooking for about 3 minutes on each side or until they turn golden brown. Drain on paper towels and cool on a wire rack.
  5. Once cooled, drizzle each puri generously with the rose and cardamom syrup and top with chopped pistachios or almonds for an elegant finish.
