Preparation and Cooking
- Preheat your oven to 400°F (200°C) or set up your grill to medium-high heat.
- Peel and devein the shrimp, wash and quarter the red potatoes, shuck and cut the corn into thirds, and slice the sausage into even pieces.
- In a large bowl, combine the shrimp, sausage, corn, potatoes, olive oil, and Cajun seasoning. Toss gently to coat evenly.
- Cut large sheets of aluminum foil, one for each serving. Divide the mixture evenly and seal tightly.
- Place the foil packs on a baking tray and cook in the oven for 25-30 minutes or grill until everything is tender.
- Carefully open the foil packs and garnish with fresh parsley and lemon wedges before serving.
