Ingredients

  • 1 pound large shrimp, peeled and deveined fully thawed frozen shrimp works if fresh isn't available.
  • 12 ounces smoked sausage (andouille, kielbasa, or Cajun-style) feel free to choose your favorite sausage variety based on preference.
For the Vegetables
  • 2 ears fresh corn, cut into thirds for easy packing
  • 1 pound red potatoes, quartered or parboil for quicker cooking.
For Seasoning
  • 2 tablespoons Cajun seasoning consider Old Bay or Italian herbs for different flavor profiles.
  • 2 tablespoons olive oil use a light drizzle for even coating.
  • 3 cloves garlic, minced adjust these to your spice tolerance.
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Garnish
  • 1 tablespoon fresh parsley, chopped adds color and freshness.
  • 1 lemon wedges provides a bright finish.

Method
 

Preparation and Cooking
  1. Preheat your oven to 400°F (200°C) or set up your grill to medium-high heat.
  2. Peel and devein the shrimp, wash and quarter the red potatoes, shuck and cut the corn into thirds, and slice the sausage into even pieces.
  3. In a large bowl, combine the shrimp, sausage, corn, potatoes, olive oil, and Cajun seasoning. Toss gently to coat evenly.
  4. Cut large sheets of aluminum foil, one for each serving. Divide the mixture evenly and seal tightly.
  5. Place the foil packs on a baking tray and cook in the oven for 25-30 minutes or grill until everything is tender.
  6. Carefully open the foil packs and garnish with fresh parsley and lemon wedges before serving.
