Ingredients

For the Buns
  • 3 cups All-Purpose Flour Gluten-free flour blend as a substitute.
  • 2 teaspoons Active Dry Yeast Instant yeast can be used without adjustments.
  • 2 tablespoons Sugar Honey or agave syrup can be used as alternatives.
  • 1 teaspoon Salt Essential for balancing the taste.
  • 1 cup Warm Water Avoid boiling water to prevent killing the yeast.
  • 2 tablespoons Vegetable Oil Melted coconut oil or neutral oil can be used.
For the Filling
  • 1 cup Pork Belly, Chicken, or Tofu Choose your favorite protein.
  • 1 cup Vegetables (Cabbage or Carrots) Mix and match for desired crunch.

Equipment

  • Bamboo Steamer
  • mixing bowl
  • Floured surface

Method

Preparation
  1. In a large bowl, mix together the all-purpose flour, sugar, salt, and active dry yeast. Gradually pour in the warm water while stirring to form a soft dough that holds together.
  2. Transfer the dough onto a floured surface and knead it for about 10 minutes until smooth and elastic.
  3. Place the kneaded dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm spot for about an hour, until doubled in size.
  4. Once risen, punch the dough down gently to release air. Divide it into smaller pieces and roll each into small circles, about 3 inches in diameter.
Filling & Steaming
  1. While the dough rises, cook your chosen protein in a pan with soy sauce and Sriracha until caramelized. Mix in chopped vegetables like cabbage or carrots.
  2. Place a spoonful of the filling on each dough circle. Fold over and pinch the edges to seal. Steam in a bamboo steamer lined with parchment paper for 15 minutes.
