Ingredients

For the Dough
  • 2 cups All Purpose Flour (Maida) gives the Bhatura its soft and pliable texture.
  • 1 teaspoon Carrom Seeds (Ajwain) adds a distinct flavor and aids digestion.
  • 1 teaspoon Salt enhances the flavors of the other ingredients.
  • 1 tablespoon Ghee introduces a rich, buttery taste essential for authentic Bhatura.
  • 3 tablespoons Yogurt (thick curd) contributes to the dough's tenderness and slight tanginess.
  • 1 tablespoon Sugar balances flavors and helps achieve a beautiful golden color.
  • 2 teaspoons Yeast essential for leavening the dough, creating that signature fluff.
  • 0.25 cup Warm Water aids in crafting a smooth, elastic dough.

Equipment

  • mixing bowl
  • Deep Pan
  • Slotted spoon

Method

Preparation Steps
  1. In a mixing bowl, gently combine the all-purpose flour, carrom seeds, salt, ghee, yogurt, sugar, and yeast. Mix well to ensure even distribution of flavors.
  2. Gradually add warm water to the mixture and knead until a smooth, elastic dough forms—about 8-10 minutes. The dough should feel soft yet not sticky.
  3. Cover the dough with a damp cloth, and allow it to rest in a warm place for about 1-2 hours, or until it doubles in size.
  4. After rising, punch down the dough to release air. Shape it into small balls, then flatten each ball gently with your hands to create discs.
  5. Heat oil in a deep pan over medium heat. Once hot, carefully add the flattened dough. Fry until the Bhaturas puff up and turn golden brown—about 1-2 minutes each side.
  6. Remove the fried Bhaturas using a slotted spoon, letting the excess oil drain off onto paper towels.
