For the Corn Mixture
  • 4 cups Corn kernels fresh, frozen, or canned
  • 6 slices Bacon
  • 2 tablespoons Butter unsalted
  • 1 medium Onion finely chopped
  • 1/2 cup Heavy cream or half-and-half
For Seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper freshly cracked
  • 1 teaspoon Smoked paprika or regular paprika
For Garnish
  • 1/4 cup Chopped fresh parsley

Method
 

Directions
  1. Place bacon in a skillet over medium heat; cook until crispy, about 5-7 minutes.
  2. Remove bacon from the skillet and let it drain on paper towels. Once cooled, crumble it into small pieces.
  3. Discard excess grease from the skillet but leave about 1 tablespoon behind.
  4. Melt the butter in the skillet over medium heat.
  5. Add the chopped onion to the skillet and sauté until soft and translucent, about 3 minutes.
  6. Toss in the corn kernels and cook until lightly browned and crisped up, about 5-7 minutes.
  7. Pour in the heavy cream and cook for 2 minutes, stirring to create a velvety sauce.
  8. Add salt, freshly cracked black pepper, and smoked paprika to the corn mixture; mix well.
  9. Add back the crumbled bacon to the skillet; heat through for 1-2 minutes.
  10. Sprinkle with freshly chopped parsley before serving.
