Ingredients
  

For the Cookie Dough
  • 1 cup Butter Can substitute with margarine or vegan butter
  • 1 cup Granulated Sugar Can swap with coconut sugar for different flavor
  • 1/2 cup Dark Brown Sugar Light brown sugar can also be used
  • 1 large Egg For vegan, use flax eggs instead
  • 1 large Egg Yolk For vegan, use an additional flax egg
  • 1 teaspoon Vanilla Extract Pure extract preferred
  • 2 cups All-Purpose Flour Can substitute with gluten-free flour
  • 1 cup Cocoa Powder Unsweetened cocoa is best
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
For the Frosting
  • 2 cups Powdered Sugar
  • 1/2 cup Room Temperature Butter Can replace with non-dairy versions
  • 2 tablespoons Milk Any plant-based milk for dairy-free

Method
 

Cookie Preparation
  1. Melt Butter: In a saucepan, melt the butter over low heat. Stir occasionally, then let it cool to room temperature.
  2. Mix Sugars: In a mixing bowl, combine the melted butter, granulated sugar, and dark brown sugar. Whisk until smooth.
  3. Add Wet Ingredients: Whisk in the egg, egg yolk, and vanilla extract until fluffy.
  4. Combine Dry Ingredients: Whisk together flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix into wet mixture.
  5. Chill Dough: Cover the dough with plastic wrap and refrigerate for 30 minutes.
  6. Preheat & Shape: Preheat your oven to 350°F (175°C). Scoop and roll the chilled dough into balls, then flatten them.
  7. Bake: Bake for 9-10 minutes until edges are firm. Allow cooling on tray.
Frosting and Decoration
  1. Make Frosting: In a bowl, whip together powdered sugar, room temperature butter, and milk until smooth.
  2. Frost & Decorate: Once cooled, frost cookies and add candy eyes. Get creative!
