Directions
  1. Wash and pat dry the chicken breasts, ensuring they're free of excess moisture. Set them aside on a clean cutting board while you gather your ingredients.
  2. In a bowl, combine the grated Parmesan, minced garlic, salt, black pepper, and Italian seasoning. Stir until all the spices are well blended.
  3. Coat each chicken breast with the Parmesan mixture, pressing gently to ensure adherence.
  4. Drizzle olive oil into the bottom of the slow cooker. Place the seasoned chicken breasts in a single layer.
  5. Halve the baby red potatoes and scatter them around and on top of the chicken.
  6. Pour the chicken broth over the layered chicken and potatoes.
  7. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Once cooked, transfer the chicken and potatoes to a serving dish and drizzle any flavorful juices over the top.
  9. Just before serving, sprinkle the chopped fresh parsley over the dish.
