  • 1 pound Ground Chicken Can substitute with ground turkey or lean pork.
  • 1 cup Parmesan Cheese Romano cheese can be used as an alternative.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can replace if needed.
  • 2 large Eggs
  • 4 cloves Minced Garlic Adjust according to garlic preference.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil Fresh herbs can be used if preferred.
  • 1 teaspoon Dried Parsley Fresh herbs can be used if preferred.
  • 1 teaspoon Salt Season to your liking.
  • 1 teaspoon Black Pepper Season to your liking.
  • 1/2 cup Whole Milk Can substitute with plant-based milk.
For the Glaze
  • 2 tablespoons Unsalted Butter Can be substituted with olive oil.
  • 1/4 cup Additional Parmesan Cheese Using fresh cheese is a delightful touch.
  • 2 cloves Minced Garlic

Method
 

Instructions
  1. Preheat Oven: Set your oven to 190°C (375°F) and prepare a lined baking sheet or greased loaf pan.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk. Stir gently until mixed.
  3. Shape Loaf: Form the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
  4. Bake: Let it bake for 40-45 minutes until the internal temperature reaches 74°C (165°F) and the top is browned.
  5. Prepare Glaze: Melt unsalted butter in a saucepan over medium heat, add minced garlic, sauté until fragrant, then mix in additional Parmesan and parsley.
  6. Glaze and Finish: Brush the garlic glaze over the meatloaf and return it to the oven for an extra 5-7 minutes.
  7. Rest & Serve: Let the meatloaf rest for 5 minutes, slice, and garnish with extra parsley before serving.
