Steps to Prepare
  1. Start by measuring and chopping all your ingredients.
  2. Place the chicken breasts at the bottom of the crockpot. Add the halved baby potatoes, then sprinkle the minced garlic, grated parmesan, oregano, basil, salt, and pepper. Drizzle with olive oil.
  3. Set your slow cooker on low for 6 hours or on high for 3 hours.
  4. When the cooking time is up, ensure the chicken shreds easily with a fork and is at least 165°F internally.
  5. Dish up the chicken and potatoes, then top with extra parmesan and a squeeze of lemon.
  6. Garnish with freshly chopped parsley if desired.
